Explanation
In the lotion formed by two immiscible liquids, the substance that can adsorb at the liquid-liquid interface and significantly reduce the free energy of the liquid-liquid interface can promote the two immiscible liquids to form a uniform and stable lotion system. The vast majority of emulsifier are surfactants, which are composed of hydrophilic and hydrophobic groups. They can form molecular films at the mutually exclusive oil-water interface to reduce their surface tension.
